1. Chocolate Wafer Chiffon

Ingredients for the filling:

  • 2 cups milk
  • 3 eggs
  • 1/4 tsp. salt
  • 1 cup sugar
  • 2 tbsp. gelatin
  • 1 pt. whipped cream
  • Flavoring of your choice

Bring milk to boil in a pan, add sugar, beaten egg yolks and salt.  Cook over hot water until mixture coats spoon, and set aside.  Dissolve gelatin in 1/2 cup water, stir the mixture into custard and cool.  When custard is quite firm, fold in stiffly beaten egg whites, whipped cream and flavoring of your choice (mint, almond, rum, etc.).

Chill until mixture begins to set, and then pour over crushed chocolate wafers, such as Clasen Alpine Dark Wafers.  

Ingredients for the crust:

  • 8 oz. Clasen Alpine Dark Wafers
  • 1/2 cup butter
  • 2 tbsp. powdered sugar

Using a rolling pin in large plastic bag crush the wafers as finely as you can, reserving about 1/4 for top of the pie.  Mix chocolate crumbs, sugar and melted butter well.

Line the pie pan with baking paper, press mixture firmly on bottom and sides. Bake 10 minutes at 350 degrees.  

Top the pie with whipped cream and chocolate crumbs.  You’ve just created exquisite chocolate wafer chiffon, enjoy!

2.  Chocolate Mint Cheese Tart

  • 3/4 cup crushed Clasen Satin Bitter Sweet Chocolate Wafer
  • 1 cup low-fat cottage cheese
  • 1 (8 oz.) pkg. light cream cheese
  • 3/4 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 3 tbsp. creme de menthe syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 3 tbsp. Clasen Natural Chocolate Liquor Wafer
  • Strawberry halves, for garnish

Sprinkle wafer crumbs evenly on bottom of 8-inch spring form pan and set aside.  Blend cottage cheese in blender until smooth; add all remaining ingredients except chocolate pieces and strawberries.  Blend until well combined and the mixture is thick. Stir in chocolate pieces, and pour the mixture into prepared pan.

Bake at 300-degree F for 35-40 minutes or until nearly set when gently shaken.  Cool on wire rack 10 minutes, and then loosen sides of pan.  When completely cooled off, cover and chill several hours or overnight.  

When ready to serve, dust with cacao, garnish with strawberries or other fresh fruit, and enjoy!
