1. Chocolate Mousse

  • 1 cup heavy cream, very cold
  • 3 large egg whites (free of any yolk), room temperature
  • 5 oz. Wilbur Semi Sweet Chocolate Bronze Medal chocolate, coarsely chopped; or, you can use Merckens ADM Bittersweet Choc Value Coating Wafers
  • Whipped cream, sweetened (optional)

This recipe calls for only three ingredients, yet the result is a rich and sophisticated mousse.  To achieve this, make sure your ingredients are fresh and high quality.

In a medium saucepan pour 2 inches of water and bring to a simmer over medium heat. Put chocolate and 1/4 cup of the heavy cream in a large heatproof bowl, and the rest of the heavy cream back in the refrigerator to keep cold until later use.  Place the bowl over the saucepan so that the bottom of the bowl does not touch the water.  Let the chocolate melt, stirring occasionally with a rubber spatula.  When the mixture is smooth and chocolate completely blended with the cream, remove the bowl from the saucepan and set aside to cool slightly.

Put egg whites in a second large bowl (make sure the bowl and the egg beater or mixer are free from oil or fat, or the whites will not whip properly); whisk vigorously for about 4 minutes, or use an electric mixer, until you see firm crowning form. 

Place the remaining 3/4 cup heavy cream in a separate large bowl and whisk with a clean egg beater or mixer until stiff peaks form.  Fold half of the whipped cream into the melted chocolate with a rubber spatula, and then softly stir in the other half.  Gently fold the egg whites, without mixing too much, into the chocolate and heavy cream mixture.

Gently spoon the mousse into serving bowls, refrigerate for at least 2 hours, and serve with sweetened whipped cream if desired.

You’ve just created an elevated chocolate pudding, ENJOY!


2. Chocolate Popcorn Clusters

  • 1 tablespoon olive oil
  • 1/2 cup popcorn kernels (10 cups popped)
  • 3/4 cup semi or bittersweet chocolate
  • Pinch sea salt 

This sweet and salty, crunchy treat can be enjoyed anytime, especially with friends and a movie.  Plus, it’s so easy to make!

Line a rimmed sheet pan with parchment paper.  Heat the oil in a large pot over medium heat, add popcorn, cover with a tight fitting lid; when the popcorn starts to pop, shake the pot.  Remove from the heat once it stops popping, and transfer to a large bowl.

To melt the chocolate: fill a medium saucepan with 2 inches of water, bring to a low simmer, add the chocolate into a medium bowl and place over the simmering water (the bottom of the bowl should not touch the water).  Stir until melted and smooth.  You can also melt the chocolate in the microwave - make sure you do it in small time increments, stirring each time so it doesn’t burn.

Pour the chocolate over popcorn, using 2 large spoons to stir so the chocolate gets evenly distributed.  Dust popcorn with sea salt, toss again, spread onto the oiled pan, and refrigerate for about 10 minutes.  Once chocolate sets onto popcorn, break into small clusters, and enjoy.


3.  Chocolate Truffles

  • 8 ounces of semi-sweet or bittersweet chocolate, well chopped into small pieces
  • ½ cup of heavy whipping cream
  • 1 teaspoon of vanilla extract
  • Cinnamon (1 cinnamon stick or ½ a teaspoon, optional)
  • Almond extract (1 teaspoon)
  • Cocoa powder
  • Finely chopped walnuts
  • Finely chopped almonds

Place heavy whipping cream in a small saucepan and bring to a simmer, while stirring occasionally and scraping down the sides with a rubber spatula.

Place the chocolate in a separate bowl, pour the nearly boiling cream over, add the vanilla, cinnamon and almond extract (optional), stir until melted and smooth.  You have just created a delicious chocolate base called ganache.

Once ganache cools down, place in the refrigerator for two hours. Remove and form balls with a teaspoon, roll in your hands quickly so they don’t melt from the warmth of your hands, place on a baking sheet lined with parchment paper, and refrigerator overnight.

Coat the truffles with cocoa powder and/or finely chopped walnuts or almonds.  Share and indulge!

 

4.  Chocolate Cookies Filled With Peanut Butter

Chocolate and peanut butter lovers – this is for you!

  • 2 cups flour
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cornstarch
  • 1 tablespoon Vanilla extract
  • ¾ cups unsalted butter, melted
  • 1 cup brown sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 1½ cup Van Leer Semi-Sweet Fountain Chocolate chips, or Barry Callebaut Passover Semi Sweet Chocolate Callets (or a combination)
  • 2 cups Hershey's Ground Reese's Peanut Butter Cups

Combine flour, baking soda, salt, and cornstarch; sift together.  Mix butter and sugar in a large mixing bowl, beat in vanilla extract, add in the egg and egg yolk and continue beating until the mixture is light and creamy.  Add in the dry ingredients and stir gently until they blend together, then mix in the chocolate chips.

Line a baking sheet with parchment paper.  Scoop out about ¼ cup of dough and wrap around 2-3 Reese's peanut butter cups, sealing the edges; keep doing this until you use up all the dough.  Place cookies on the baking sheet and refrigerate for 20-30 minutes. 

Preheat oven to 325 degrees; bake cookies for about 15 minutes, making sure they are spaced 3 or so inches apart.  You’ll know the cookies are baked when their edges become golden.  Let the cookies cool on the baking sheet.

These large, stuffed cookies are chewy in the middle and wonderfully crispy around the edges – a delectable combination of chocolate, dough and peanut butter!

 

5.  Nonpareils, Sanding Sugar & White Chocolate Covered Strawberries

  • 2 lbs. fresh strawberries with fresh green caps attached
  • 2 cups Merckens ADM Cocoa Ivory White Chocolate Buttons
  • 1 tablespoon shortening
  • 1 cup Kerry Ingredients Rainbow Sanding Sugar
  • 1 cup Weaver Nut Lavender Nonpareils

Wash the strawberries with the green caps on and let dry.  Put together 1 cup of white chocolate chips and 1 tablespoon of shortening in a metal bowl and place it over an inch of simmering water; stir until it’s smooth and melts.

Pour sanding sugar and nonpareils in separate bowls.  Line a baking sheet with parchment paper.

Dip the strawberries in the melted white chocolate, then partially in the sugar and partially in the nonpareils, or do one of each.  Place dipped strawberries onto the baking sheet and leave until they harden.
