Candy makes a great holiday gift, and if they are homemade, it makes it extra special.  

Still, not everyone has the time to make their own candy from scratch, so we’d like to feature some products that will make it easy to create yummy treats this holiday season.

Marshmallow-y Caramel Bars

These chocolate caramel bars are delicious, presentable, and great for parties and celebrations, or as a holiday gift.

What you’ll need:

  • 1 Pound Chocolate (white, milk, or dark)
  • 1 Pound Caramel
  • 1 Cup Marshmallows

Start by melting the chocolate.  Slowly add marshmallows by gently folding them into the melted chocolate.

Depending on which method you’re using for melting the caramel (see methods below the recipe), you may want to start this process in advance, or at the same time as melting the chocolate.  To keep the chocolate and caramel warm, leave them in the microwave, and the heat from the caramel should be enough to maintain temperature for short periods.

Line the bottom of your favorite mold with the chocolate mixture, filling up about a third of the mold cavity.

To settle the mixture into the mold cavity, lift the entire mold with your hands on each side of the mold about 2 inches over the countertop, and then let the mold drop.  The goal is to even out the settle the chocolate layer into the mold, so repeat as necessary.

Drizzle Caramel over the first layer, leaving a little margin around the edges of the mold.

Top off the mold cavity with the rest of the chocolate mixture, and settle the cavities again.

Cool for about 30 minutes before removing from the mold, and then let them sit out for an hour or so.  Now, if you wish, your candy is ready for any special design/sprinkle on top.  This recipe is for about 20 - 30 good-sized Chocolate Caramel bites.  You can put them in a nice gift box, or use caramel cellophane wraps.

Voila – you’ve just created an amazing custom chocolate candy using only three ingredients!

Here are some tips on Peter’s caramel for your customers, in case they want to get even more creative in the kitchen:

Peter’s caramel loaf is soft and pliable, so it can quite easily be melted or rolled out, cut and shaped.

If you wish to thicken the caramel, simply add ½ - 1 oz. confectioners’ sugar to 1lb. of caramel.

To make the caramel thinner, add heavy cream, or a can of sweetened condensed milk and one cube of butter to the 5lb. loaf of caramel.

Melting caramel using the stovetop is best done at approximately 125 -150 degrees, as it allows for easy pouring.

To melt caramel in the oven, preheat oven to 200 degrees and place caramel in a French Oven (enameled round baking dish).  It will take approximately 60 - 90 minutes to melt completely.

Melting caramel in the microwave can be done using a microwave-safe bowl, and cooking it on high for one minute.  Stir and then repeat on medium for one minute, and repeat until caramel is melted.

One 5-pound loaf of Peter’s caramel will cover about 25 medium-sized apples, 40 - 60 pretzel sticks (half dipped).
